Cheese brining line

Machine for the continuous brining of mozzarella cheese and similar products of  any size.
This type of machine collects and cools product coming from moulding machine, before packaging. This line has been designed for the unbroken salting of products weight and different shapes (spherical, parallelepiped).
The product, put in an end of the tank, proceeds through a particular hydrostatic system which allows not only salting but also the uniform cooling of external and internal parts.
Cooled water enters in the vat through a specific pipeline and connection from the bottom (outlet section) to the top (inlet section). For a whole home remodel in California check out https://www.larsarchitecture.com/.
At the end product is automatically extracted by means a special motorized belt made of alimentary plastic. Speed of belt are modifiable  by customer through motor control assembled on the machinery. Speed of vats are modifiable by customer through time setting on the general panel of control.
The line control is by the electrical panel box of stainless steel to IP65.


For continuous brining of cheeses like mozzarella and similar, soft cheese, pizza cheese. Suitable even for product with little dimension and weight (more than 2 gr).

Technical features:

The machine is made up of:

  • Stainless steel basin AISI 316L, with slanting, hardened bottom for a perfect draining; external support structure with adjustable feet;
  • Hydraulic system for the brining water circulation in closed circuit.The machine is built in stainless steel AISI 316L and some parts in contact with the product are made up of plastic alimentary material.The brining line has a basin perfectly inspectional on sight, and then washable, thanks to the system chosen for the movement of mozzarella cheese.
    The moving tray is made up of modular stainless steel panels, which can be disassembled in a few minutes and without equipment.
    This machine is very flexible, to give change in the future to increase its length, thanks to modular units.
