This machine is built with double chamber totally heated.
The working temperature of the section of augers and extrusion, are managed by PLC. The two temperatures are independent, therefore is possible to work with different temperatures in the section of augers and in the final section of extrusion. The moulding section feeds a moulding carousel (pre-hardening head) where are located several drums. The drums, with desired shape, are welded radially on rotary disk.

The cheese mass, from the feeding hopper, will be pushed in the extrusion section, through two counter-rotating augers with adjustable speed.

The head has a rotational motion around its axis, therefore the drums once filled, will be sent to the unloading section, where the product will fall in the cooling vat, or on the loader (if supplied). The filling section of drum, in according to desired weight, and the unloading section, are equipped of double pneumatic system.

The pneumatic system in the loading section, is equipped with several height detectors in according to the quantity of moulding drums welded on the same line. This system ensures that will be produced always products with the same weight. During this moving, thanks to the intermittence of the mould motion, the drums filled of cheese mass, are totally covered by cooling water with set temperature. The passing of the moulding drums in the water, allows to obtain a product already pre-hardened.

The management of each operation is automatically controlled by PLC with touch screen mounted in the electric panel.

Production:

For production of pizza mozzarella, kasar, kashkaval, suluguni and similar product.


Technical features:

The machine is fully made in stainless steel AISI304, and the parts in contact with the product are covered by a film of FEp (Teflon du Pont) synthetized at high temperature, or in alternative, are made in food plastic material, in compliance to the norm for the material in contact with food products.

The moulding machine with pre-hardening head is built in compliance to EEC DIR 83/392, 92/46, 91/368, DPR 54/97 and to the safety norms in force

The middle disk, is made in food plastic material. The under disk is made in stainless steel.

All the moulding section is complete of coverage in stainless steel, that can be positioned in position of semi-opening, to allow the control of the working process in any time.
